Magic in the origin: Buesaco, Nariño

Now that we know a little more about what specialty coffee is, it's time to talk about one of the most important factors when defining the quality of coffee: the origin.

The origin is an essential part not only of coffee, but of any quality product. You can see it in olive oil or wine, in which the region from which it comes gives it a flavor, aroma, body and an endless number of other factors.

In the case of coffee, origin is one of the things that distinguishes one type from another the most!

When you are looking for good coffee, what is the first difference you notice between them? The origin. You see coffee from Colombia, Kenya, Guatemala, Vietnam, and much more. Why are they defined that way? Simple: Depending on the particularities of the region of origin of the coffee, you can get a coffee bean of one flavor and have other characteristics very different from that of another origin. It is part of the magic of coffee; you can try different flavors and experience different aromas depending on the region from which they come from.

Colombiain particular has a reputation (well deserved, it must be said) of being one of the countries that produces the best coffee. Its climatic conditions, wide mountains and high altitude regions, humidity, and infinite environmental factors combine to create coffees of exceptional quality.

But even within Colombia, we can go a step further. Our Elixir has a magical, unique provenance. Let's find out!

The Nariño region, in Colombia, is one of the only two regions in the country that have their own designation of origin. In other words, we are talking not only about Colombian coffee but also about Nariño coffee. What does this mean? Quite simply, the coffee that comes from Nariño is terrific, even within the proven quality of Colombian coffee.

And what makes ELIXIR so special?

The altitude and temperatures to which coffee is exposed during the day and night.

Our coffee is grown on the slopes of the most active volcano in Colombia, the Galeras volcano, at an altitude of 2,200 meters above sea level. The warm winds of the Pacific Ocean flow through the valley and prevent plants from freezing. Due to the drastic change in temperature, coffee plants enter survival mode and undertake a metabolic process that results in a very characteristic flavor.

Growing coffee at this height is only viable if it is very close to the equator, since it allows solar radiation throughout the year.
