WHAT IS SPECIALTY COFFEE AND WHY WILLIT CHANGE YOUR WAY OF DRINKING COFFEE?

Impossible to start this blog with anything other than the base, the essence of everything:

Specialty coffee.

Nowadays, it's almost inevitable to hear the word coffee without hearing the phrase "specialty". But this is not just a title, a name that is used to make it “cooler”. Behind this there is real weight, a real difference compared to any roasted coffee you drink at the corner bar or buy almost without thinking in the supermarket.

But what does it really mean? What makes a specialty coffee?

We start with the technical part. A coffee is defined as specialty when it is scored from 84-85 points (on a scale of 100) by a professional taster. This scale is called the Q System and is implemented by the Coffee Quality Institute (CQI). But this is the boring part, a simple number. We are going to look further, to explore what are the reasons why a coffee gets that score, how beautiful it looks:

1. The Origin:

Specialty coffee usually comes from regions with very particular conditions. Height, humidity, temperature, soil, sun (or shade) are some of the factors that affect the quality of the grain. The particularities of a region can produce a very different bean from others. Regions of high altitude, humidity and fertile soil produce quality coffee worthy of being called specialty.

2. 2. Craft process::

A manual, careful and respectful process in all its phases is essential for a coffee to be a specialty. The beans are picked by hand and at their optimum ripening point. The peel of the fruit is carefully separated and dried, ideally in the sun. Beans that show visible defects in color, shape, size, among other things, are manually discarded. For your perspective, these discards are called "pasilla", and are later sold as commercial coffee in supermarkets. Care and attention to detail throughout the process is vital to provide an excellent and special bean.

3. The roasting profile::

This is where the magic is done. Roasting coffee is an art. No coffee is the same as any other, and a subtle and different roasting depending on the coffee is required to fully extract its qualities. The aroma, flavor, nuances ... An artisan roast made with passion makes all the difference.

It's obvious where we are going with all this, right? Specialty coffee is simply so much better in every way.

Elixir meets these characteristics, even that boring number that we mentioned before. It has a score of 87.25, but what really matters is why, right?
