Colombia is one of the countries with the best coffee & eacute; produce in the world. Its climatic conditions, wide mountainous and high altitude regions, humidity, and infinite environmental factors combine to create coffees of exceptional quality. The Nari & ntilde; o region, in Colombia, is one of the only two regions in the country that have their own designation of origin.
At 2,200 meters above sea level is the province of Buesaco where the most active volcano in Colombia is located, the Galeras Volcano. At this point, the warm winds from the Pacific Ocean cross the valley and prevent plants from freezing. Due to the drastic change in temperature, coffee plants enter survival mode and undertake a metabolic process that results in a very characteristic flavor.
Almost 2,500 families grow coffee in this territory. Its farms do not exceed two hectares. This creates an extremely selected product in which growers personally take care of harvesting, fertilizing and planting efforts. Smallholders typically produce washed coffee that undergoes fermentation for 12 to 16 hours before drying on African roofs or beds for 8-14 days.
The coffee is vacuum packed at origin, thus preserving its special characteristics for a longer time.
